How did the Bellini originate? The story goes that a waiter, from Harry’s Bar, was given a ripe white peach by his mother to bring to work. He peeled the peach, put it in a champagne flute and topped it off with Prosecco. It proved a huge success and the Bellini was born. The drink began as a seasonal specialty at Harry’s Bar. Later, it also became popular at its New York bar counterpart. After an enterprising Frenchman set up a business to ship fresh white peach puree to both locations, it became a year-round favorite.
